Brined Pork Chops

This is a glorious way to eat pork chops, very tasty, tender and juicy. The important thing is to not over brine them, so salt concentration and timing is everything. The chops are grilled and as you see the grill lines really stand out on the chops, the chops were finished with a mustard/maple syrup sauce and sDSCN4534-29-Dec-2007erved with broccolini and couscous with grilled peppers.

Osso Buco

Milk fed veal shanks braised in a tomato based sauce, an Italian classic, served with saffron risotto, on top of the shank is a braised chipollini onion. For an appetizer we had endive with smoked salmon tartar, and roasted baby golden beats with reduced balsamic vinegar.

Veal pinwheels in consommé

Sheets of fresh made pasta rolled with a veal mixture, par-cooked, sliced and then gently fried. Served with veal consommé and fine dice of carrots, celery and red bell pepper, with parsley. A very good way to start a meal.

Turkey pot pie

The usual turkey pot pie, but with a twist, I pan fried some thinly sliced potato and used that for the topping instead of the regular mashed potatoes, adds lots of taste and some crunch besides the pie crust.

Braised Morocan Lamb Shanks

A favourite for fall and winter, these shanks are sweet and flavourful with lots of vegetables, served on Basmati rice.DSCN4339-29-Sep-2007

Beef Tenderloin Experiment

A nice beef tenderloin, crusted with a goat cheese and herb mixture, with some mashed potatoes and baby summer squash and caramelized onions maple syrup and white wine. As an experiment the goat cheese crust was OK, a compound butter would have been much better.
