Beet Salad

A tower of roasted golden beet, pickled red beet, baked serrano ham, ricotta salata, balsamic glaze and wrapped in chives. Very tasty.

Roast chicken thighs on Pearl Barley

This is more of a fall/winter dish, but you have to change things up once in a while, this is a riff on a Jamie Oliver dish “Pan-Fried Partridge with a Delicate Pearl Barley, Pea and Lettuce Stew“, I also added fresh corn.

Chicken Enchiladas

Simple chicken enchiladas, made from left over roast chicken, the sauce is made from scratch and is spiced with a guajillo chili. And topped with jack cheese. I used a whole wheat soft tortilla, but I think the traditional hard corn tortilla would be better (but it is pretty hard to find in my neck of the woods.)

Roasted Chicken with BBQ glaze and roasted vegetables

This is an ode to Jamie Oliver, a roasted chicken glazed with my own BBQ sauce made with guajillo chili (or as I call it the dream chili, since it induces psychedelic dreams)

The veg of carrots, red potatoes, onions and garlic scapes were thrown into the pan in the last hour to roast and soak up all the juices, there was also some red wine added to the roasted vegetables.

French Toast and Fresh Berries

Simple French Toast and fresh raspberries and blue berries along with fresh berries and maple syrup.
