Turkey pot pie

The usual turkey pot pie, but with a twist, I pan fried some thinly sliced potato and used that for the topping instead of the regular mashed potatoes, adds lots of taste and some crunch besides the pie crust.

Home made ravioli

Home made ravioli, made with regular flour and not semolina, stuffed with veal. We over stuff our pasta so you only need a few to fill you up. The one issue with over stuffing the pasta is that they are harder to cut and they occasionally explode in the pot, but with a little salt you can actually make a nice soup out of the “rejects”. Finally the other dish made this day is a sheet of pasta rolled up with veal, par boiled, cut into medallions then fried in butter and finally served with home made tomato sauce.

Braised Morocan Lamb Shanks

A favourite for fall and winter, these shanks are sweet and flavourful with lots of vegetables, served on Basmati rice.DSCN4339-29-Sep-2007

Beef Tenderloin Experiment

A nice beef tenderloin, crusted with a goat cheese and herb mixture, with some mashed potatoes and baby summer squash and caramelized onions maple syrup and white wine. As an experiment the goat cheese crust was OK, a compound butter would have been much better.

Home made Ravioli

Home made ravioli, stuffed with ground veal and herbs, the dough is made from simple white flour. This is my wife’s and her mothers recipe and fresh ravioli is far superior to the stuff you buy in the store. The tomato sauce is Classico.

The King of the Grill

Veal chops are the king of the grill in my mind, dusted with Barbarian Steak Spice and served medium rare, absolutely mouth-watering. Served with a potato galette, thinly sliced Yukon gold potatoes and pan fried (I find cast iron works best) and served with summer squash with caramelized onions, and a little maple syrup.

BBQ Ribs

My Mom’s rib recipe, but finished on the BBQ instead of the usual braising. Pretty good, but not nearly as good as slow cooked over charcoal.

Veal Marsala and Baby Broccoli

A simple but very tasty veal Marsala, easy to prepare but you need to have good veal stock on hand and a sweet Marsala. Besides the usual mashed potatoes I prepared some babt broccoli which Arlene picked up, simply sautéed with butter, onions and white wine.

MIxed Seafood Grill

A simple seafood grill, sea scallops,jumbo tiger shrimp and calamari. I’ve never made calamari before so this was a bit of an experiment, and as such, the calamari was OK, I’m going to try it again only marinating the squid before hand. As for the scallops I can’t thing of better way to eat scallops then off the grill or pan seared, and in my opinion the only way sea scallops should be eaten. We also had some left over Spanish rice which completed the Mediterranean style dinner.

Hamburgers

A simple sirloin steak hamburger, topped with cheese and hickory smoked bbq sauce, served with an avocado and cucumber salad and hash brown.
